STANDISH: What is the first thing you ever remember cooking?


I would have to say Jiffy Pop Popcorn at the age of 7 on a stove my grandmother had to light.



STANDISH: Who is someone you looked up to as a child & still do today?


Although my dad and I had our ups and downs, I would have to say my father and he is my hero. My dad protected me from an abusive mother by having custody of me but my father also made me passionate about cooking by watching shows like Food Network and Secrets of the CIA. He pushed me to do what I love although at first I didn't listen.



STANDISH: What is something you hate doing in the kitchen?


Reminding people that teamwork makes the food taste better.



STANDISH: What was the most nerve racking part of being on Hell's Kitchen?


The lack of teamwork and the other nonsence involved in a reality televison show.



STANDISH: How was working with Gordon Ramsay?


No different than working with Robert Irvine, I am used to working with English tenacity. It was Gordon's final words to me that meant the most.



STANDISH: Did you expect to land Hell's Kitchen?


I had a very stong feeling that I was being casted.



STANDISH: What is your favorite food for take out? Why? 


I really don't like take out food because I feel that it changes the flavors of the dish. However, I am okay with a hoagie from a sandwhich shop.



STANDISH: Tell the readers your reoccurring kitchen nightmare… 


Honestly, staff calling out.



STANDISH: What is the most underrated cooking ingredient in your opinion?


Zest from lemons. A little zest goes a long way.



STANDISH: What do you listen to while you chef it up? 


Anything from old school rap to 80's metal



STANDISH: How many times a week does the walk-in cooler hear your screams?


Not as much as it used to. At 52, I'm calming down in my old age.



STANDISH: If you could change one thing in the world today, what would that be?


People's attitudes, but you can't fix stupid.
